Apple Rum Cake

This cake is very delicious and moist! It is generously full of apple chunks!


  • 1 cup all-purpose flour

  • 1/4 tsp. salt

  • 1 tsp. baking powder

  • 1/2 cup butter (room temperature)

  • 2/3 cup sugar

  • 2 large eggs

  • 1 tsp. vanilla

  • 3 tbsp. dark rum

  • 4 cups chopped apples (cubed)

  • 2 - 3 tbsp. icing sugar


Preheat the oven to 350F. In a small bowl, mix together the flour, salt, & baking powder. In a separate bowl, cream together butter and sugar with a mixer for about 3 minutes. While continuing to use the mixer, add the eggs one at a time, as well as the vanilla and rum. Reduce the mixer to low. Slowly add the flour mixture to the butter mixture just until combined. Turn off the mixer and fold chopped apples into the cake batter. Pour batter into a greased 9x9" pan. Bake at 350F for 40 minutes. Sprinkle icing sugar on top just before serving.
